Black pepper is the name given to a spice made from the semi-ripe fruit of the pepper plant. Green and white pepper are also made from the same plant. The difference lies in the fact that white pepper means dried ripe peppercorns, green pepper means dried unripe peppercorns and black pepper means cooked and roasted unripe peppercorns.

The fruit is dried in the sun. Peppercorns can also be dried in a dehydrating machine. Those fruits which are to be used to obtain black peppercorns are dehusked before drying. Dehydration cleans the fruit, breaks up the cell shells in the fruit and speeds up the browning enzymes during drying. During the drying process, the fruit contracts around the seed and darkens into a thin, wrinkled black layer.

Black pepper enriches flavours and adds spice

Black pepper is used to add spiciness to dishes and to bring out and enhance the flavour of foods. Black pepper can be used, for example, if you want to reduce the amount of salt in your menu but still want to enrich and enhance the flavour and aroma of your food.

Black pepper can be added to almost any dish, even desserts. It is well suited for flavouring sauces, soups, stews, vegetable dishes, meat and fish dishes, marinades, salads and other dishes, either during cooking or right before serving.

Using whole peppercorns is better than using ground pepper for a number of reasons, especially in terms of taste and quality:
