Mild, aromatic and pleasantly spicy black peppercorns
Black pepper is the name given to a spice made from the semi-ripe fruit of the pepper plant. Green and white pepper are also made from the same plant. The difference lies in the fact that white pepper means dried ripe peppercorns, green pepper means dried unripe peppercorns and black pepper means cooked and roasted unripe peppercorns.

Dehydration cleans the fruit, breaks up the cell shells in the fruit and speeds up the browning enzymes during drying. During the drying process, the fruit contracts around the seed and darkens into a thin, wrinkled black layer.
