Kombu goes well with vegetables such as carrots, cabbage, potatoes and swede. This particular kombu is finely ground and looks like salt when seen in a jar.   • Brown kombu is an excellent source of vitamins and minerals: Kombu contains at least 46 minerals, 16 amino acids (building blocks of protein) and 11 different vitamins.
